1. Red onion diced
2. Yellow pepper diced
3. Green onion chopped

- Soak 1 cup cowpeas for 8 hours. Drain water from soaked cowpeas and wash them well for a couple of times. Boil until nice and soft.
- Finely chop onion, dice red onion, dice yellow pepper, chop parsley and chives.
- Add all mentioned to a hot oil, mix and stir until soft, and add the cooked cowpeas.
- Add salt and pepper for taste. Salad can be served cold or hot.
